Peg’s Recipe of the Month

Baby, it’s HOT outside, so no standing over a hot stove with this month’s cool recipe!

This quick recipe is one that you will want to prepare often during this hot weather season.

This dish makes a nice healthy summertime meal when served on a bed of Romaine, or spinach and a side of fresh fruit, and/or cottage cheese.

Summer Sausage Salad (makes about 8 servings)

12 oz package of Summer Sausage, or hard salami, cubed into 1/2 inch chunks

1 pint of grape tomatoes, halved

1 - 8oz container of fresh mozzarella cheese balls

1/3 cup chopped Italian parsley

1/2 cup Italian dressing, bottled, or your own home-made dressing


  1. Combine the sausage, tomatoes, mozzarella cheese, and parsley & give it a toss.

  2. Add the Italian dressing; toss well to coat. Refrigerate until ready to serve.
