Baby, it’s HOT outside, so no standing over a hot stove with this month’s cool recipe!
This quick recipe is one that you will want to prepare often during this hot weather season.
It just doesn’t get any easier than this one! I snatched this recipe from johnsonville.com
This dish makes a nice healthy summertime meal when served on a bed of Romaine, or spinach and a side of fresh fruit, and/or cottage cheese.
Summer Sausage Salad (makes about 8 servings)
12 oz package of Summer Sausage, or hard salami, cubed into 1/2 inch chunks
1 pint of grape tomatoes, halved
1 - 8oz container of fresh mozzarella cheese balls
1/3 cup chopped Italian parsley
1/2 cup Italian dressing, bottled, or your own home-made dressing

Directions:
Combine the sausage, tomatoes, mozzarella cheese, and parsley & give it a toss.
Add the Italian dressing; toss well to coat. Refrigerate until ready to serve.
